I have a dairy allergy, and was disappointed by vegan cake recipes I found online. I came across this one a few months ago, and it is easy and is wonderfully light, fluffy and delicious.

Ingredients

  • 1 Box of Cake Mix (any kind)*
  • 1 Can of soda (again, your choice)
  • *Or you can just use your own blend of dry ingredients (I prefer to do this due to the chemicals and preservatives in boxed cake mix)

Instructions

  1. Sift your dry cake mix into a bowl, and make a well in the centre. Pour the soda in gradually. Don’t put all of it in at once; you may not need it all. Pour into a greased and lined cake tin and bake at 175°C (350°F) until a toothpick inserted into the centre comes out clean. Simple as that!

Suggestions:
Chocolate cake mix with Diet Coke
White cake mix with 7-Up
Any cake mix with cherry soda
My personal favourite is plain cake mix with pink cream soda and a splash of vanilla. It tastes really good and is a really fun pink colour!

I love this recipe because it has so many possibilities.

Hi, I've notices that some cake mixs have 'Contains milk and Soy' on the side of the box does this effect someone with allergies? I ask because my sisters sister-in-law has asked me to make her a diary free cake for her son and I'm researching some different recipes (I have tasted a cake made with soda before and your right they are very tasty!) I'm just not sure exaxtly what cake mix I should use? I was thinking maybe Betty Crocker - eveyone loves Betty?

I tired this cake for the first time. I used Duncan Hines Orange Supreme and Stewart's Orange n' Cream Fountain Drink. I also added a bit of orange zest. I baked 5" cake and one completely fell apart trying to take it out of the pan. The other started to fall apart, but I was able to wrap it in foil strips to hold it together until it cooled. Maybe the trick to this cake is to cool in the pan? I filled the cake with buttercream made with Best Life Spread instead of butter (with LorAnn Cheesecake flavor). The cake taste was amazing. And, not all was lost because the cake that fell apart made some amazing cake ball truffles with some of this buttercream added (and rolled in cocoa or sanding sugar...) I will certainly make this cake again and may experiment with baking a little longer or leaving in the pan to cool. Thanks for the recipe idea!

I'm really interested in this but tend to make everything from scratch due to other allergies. What generally has resulted in the best outcome in terms of dry mix blend and quantities you have tried? Have you ever tried gluten free flour?

I'm going to experiment with the gluten free and report back.

I just checked a box of cake mix today and it does say may contain milk. Therefore it wouldn't exactly be vegan...but it might be an issue for someone with allergies.

Try Bob's Red Mill cake mix-it's gluten-free and tastes delish!! I'll try it with the soda and see how it works. I've made it according to the package, then I altered it by adding orange juice and zest, with a tsp of orange flavor-it came out beautifully. I have wheat and dairy allergies and am finding it challenging. On the "made from scratch" side, tapioca flour and rice flours with a bit of potato starch is a pretty good substitute, and by using almond or rice milk you can avoid the dairy problems as well. Try checking out the magazine " Living Without". It's very helpful. And many of the boxes of substitute flour have recipes-give them a test....Best of luck!
